Food Bites: A Plate of Heart Attack

I can't resist a plate of crispy, golden fried Chicharon Bulaklak or Chilak.  

How to cook this deadly treat:
1. Clean the mesenteries thoroughly.
2. Put in a pan, adding enough water to cover them.  
3. Add garlic, peppercorns, and one bay leaf.
4. Bring to a boil and simmer for about 30 minutes (until tender).
5. After boiling, drain the mesenteries, rinse them in running water, and cut them 
6. Season with salt and pepper.
7. Deep fry until crispy.*
8. Serve with spicy vinegar as dipping sauce.

Chilak is best paired with your favorite beer!  Seat back and chilak! 

*Tip:  Freeze the boiled mesenteries for two days before frying.  You'd be rewarded with crunchier, crispier chilak!
